During the Middle Ages, the dish evolved further in Europe, particularly in Spain and France. This addition transformed the simple custard into a more sophisticated dessert known as “flan”, which became a staple in Spanish cuisine. 

In Romania, caramel pudding, or Budinca cu Caramela, also became a beloved dessert, influenced by French cuisine. Romanian chefs adapted the recipe to suit local tastes, often incorporating ingredients like rum or citrus zest to enhance the flavor.
