One such variation that is super easy to make and really simple but flavorful, is Chicken Tomato Soup with Mushrooms. This soul-warming soup brings together the richness of chicken, the tanginess of tomatoes, and the earthiness of mushrooms to create a wholesome and flavorful experience. 

The origin of Chicken Tomato Soup with Mushrooms can be traced back to various regions across the globe. While tomato-based soups have part of Mediterranean and Italian cuisines for centuries, the addition of chicken and mushrooms might have been influenced by other cultures. The soup can stay fresh for 3-4 days. And if you have leftover soup or wish to make a batch for future enjoyment, freezing is an excellent option. Allow the soup to cool, then portion it into individual servings or family-sized containers. Leave some space at the top to allow for expansion during freezing. Properly stored, the soup can be frozen for up to 2-3 months. To thaw, transfer it to the refrigerator overnight before reheating.

RECIPE

Chicken Tomato Soup with Mushrooms

Ingredients

For the Soup:
  • 2 whole chicken breasts (cut in bite-size pieces)
  • 2 chicken thighs (cut in bite-size pieces)
  • 1 finely chopped celery rib
  • 1 finely chopped large carrot
  • 1 finely chopped bell pepper
  • 5 finely chopped mushrooms
  • 2 finely chopped yellow onions
  • 5 minced garlic cloves
  • 1 tablespoon & 1 teaspoon of salt
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of paprika
  • 1/4 teaspoon of cayenne pepper
  • 1/2 teaspoon of ground turmeric
  • 2 tablespoons of olive oil
  • 2 bay leaves
  • 15 ounces of tomato sauce
  • Juice from 1 lemon
  • 6 liters of water
  • 1 sprig of fresh thyme
  • 1 bunch of cilantro

Directions

For the Soup:
  1. In a large bowl, season the bite-sized pieces of chicken breasts and chicken thighs with salt (1 tsp.), ground black pepper (1 tsp.), paprika (1 tsp.), cayenne pepper (1/4 tsp.), and ground turmeric (1/2 tsp.)
  2. In a large pot or Dutch oven, add olive oil (1 tbsp.)
  3. Heat the olive oil over medium-high heat for 3 minutes
  4. Then add the chicken pieces into the oil and pan fry to at least 7 minutes
  5. Use a spoon to toss the chicken frequently (the oil will pool around the chicken if you don’t move them around)
  6. After 7 minutes, remove the chicken and set aside in a bowl
  7. Immediately add in the chopped onions (2) and minced garlic cloves (5) and sauté for 2 minutes
  8. Then add the remaining vegetables including the celery (1), carrot (1), bell pepper (1), mushrooms (5), and bay leaves (2)
  9. Sauté for 5 minutes
  10. Then add lemon juice (from 1 lemon) into the bowl and lightly scrape the bottom of the pot to incorporate all of the flavors into the dish left from the chicken
  11. Add tomato sauce (15 oz.) into the pot after you’ve scraped the bottom, and mix together with the  vegetables
  12. Add water into the pot (6 L) and a fresh sprig of thyme (1)
  13. Then return the chicken immediately back into the pot
  14. Cover the pot with a lid and cook for 20 minutes
  15. After 20 minutes add salt (1 tbsp.) and cilantro (if desired in the pot or serve fresh cilantro over each serving bowl)
