When it comes to sophisticated desserts that pack a punch of flavor and elegance, the crepe cake stands out as a true showstopper. This multi-layered masterpiece, also known as the mille crepe cake, is a testament to culinary innovation and timeless indulgence. 

The crepe cake or mille crepe as it’s called in French, is a culinary marvel that traces its origin to French patisserie. The concept of layering thin crepes with a luscious filling dates back to the early 20th century. French patissiers, always eager to innovate and captivate, experimented with combining the delicate texture of crepes with rich, creamy layers. The result was a cake that is as visually stunning as it is delicious – a true celebration of texture and taste. 

The name mille crepe translates to a “thousand crepes”, reflecting the countless layers that make up this cake. Each cake is meticulously cooked to perfection, then layered with sweet or savory fillings, creating a cake that is both light and indulgent. This dessert quickly gained popularity in France and beyond, making its way into various cuisines and becoming a beloved choice for special occasions. 

While the classic crepe cake is a showstopper in its own right, it’s incredibly versatile. Different cultures have put their spin on this delightful dessert, resulting in a myriad of variations including the classic vanilla crepe cake, matcha crepe cake, nutella crepe cake, and lemon crepe cake. Some are layered vertically, stacked in a pyramid shape, or rolled horizontally!

This version is rolled, making it easy to serve for a party, event, and dessert menu!

Chocolate Crepe Roll Cake (French Mille Cake)

RECIPE

Chocolate Crepe Roll Cake 

Ingredients

For the Crepes:
  • 4 eggs
  • 1/2 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 1/2 cup of cocoa powder
  • 300 mL of milk
  • 1 cup of flour
  • 4 tablespoons of butter, melted
  • 3/4 cup of Dulce de Leche (boiled condensed milk)
  • 200g of cream cheese
  • 1/3 cup of fresh peaches, cut finely
For the Chocolate Ganache:
  • 1/2 cup of chocolate chips, date or stevia sweetened
  • 1/3 cup of heavy whipping cream
  • 1/4 cup of hazelnuts

Directions

For the Crepe Cake:
  1. Before starting, make sure to have a pack of cream cheese at room temperature for at least an hour.
  2. In a medium-size bowl, crack open whole eggs (4) and add salt (1/2 tsp.) and vanilla extract (1 tsp.).
  3. Whisk the mixture together and then add cocoa powder (1/2 cup) through a sieve into the bowl. Mix this together.
  4. Then add milk (300 mL) and mix again.
  5. Then add flour (1 cup) and mix again in the center and slowly incorporating the outsides layer by layer until evenly incorporated.
  6. Finally, add the melted butter and mix until silky and smooth.
  7. Now heat up your crepe maker until you can sprinkle water onto it and they immediately form into bubbles sliding down across the pan/crepe maker.
  8. Add your mixture to a very flat bowl that is bigger than the size of your crepe maker.
  9. Now bring your crepe maker to the bowl and place it inside (not too deep) for just one second and immediately bring it up and flip it back so that it can cook. It will on take 30 seconds max for it to be done.
  10. Then use a wooden spatula and remove the crepe onto a plate and do the next batch, yielding a total of at least 16 crepes.
  11. Let the crepes cool, and start making your Dulce de Leche filling.
  12. In a medium-size bowl, add Dulce de Leche (3/4 cup) and whisk together with a handheld-blender. This should only take a minute.
  13. Then add a block of cream cheese (200 g) and whisk again until evenly incorporated. Don’t forget to stop halfway to use a spoon and bring down the sides of the filling on the bowl to evenly incorporate.
  14. The filling is all done.
  15. Now on a working surface, place two crepes side by side, overlapping by an inch. Cover them with the mixture using a butter knife, spoon, or spatula.
  16. Then place another two crepes, vertically from the first pair at 1/4 of their length. Cover these with the mixture, ensuring to get all of the edges.
  17. Then continue until all of the crepes have been used.
  18. Now add 1/3 cup of fresh fruits of your choice (I used peaches since they are in season, but you can use raspberries, blueberries, grapes, or even a mix!). You can also add nuts as well.
  19. Now bend the long-length edges of your crepes just slightly so that it is easy to roll.
  20. Roll from the top and all the way to the end and place onto a long dish.
  21. Place in the fridge to cool for at least 30 minutes.
  22. Then prepare the chocolate ganache.
  23. Over a small pot filled with water, add a glass bowl on top so that it fits snugly just over the water level. Turn up to medium heat and then place chocolate chips (1/2 cup) into the bowl.
  24. Once the water begins to boil, you will notice the chocolate being to melt.
  25. Then add heavy whipping cream (1/3 cup) to smooth the chocolate ganache.
  26. Mix together until shiny and immediately add hazelnuts (1/4 cup) or your nut of choice. Nuts are not required at this step.
  27. Then cover the cake with the chocolate ganache and place back in the fridge to harden for at least an hour.
  28. Then serve and enjoy!
