Cold Cucumber Yogurt Soup (Bulgarian Tarator)

Ingredients

For the Soup:
  • 1 long finely chopped English cucumber
  • 2 cups of Bulgarian yogurt
  • 1/2 cup of chopped walnuts
  • 4 cloves of minced garlic
  • 1 tablespoon of finely chopped fresh dill
  • 1 tablespoon of fresh cilantro
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1/3 cup of cold water

Directions

For the Soup:
  1. Chop the cucumber in half lengthwise and remove the seeds with a spoon
  2. Chop the cucumber lengthwise in 8 equal sections, then finely chop them
  3. In a large bowl, add the finely chopped cucumber, dill (1 tbsp.), cilantro (1 tbsp.), yogurt (2 cups), garlic (4 cloves), olive oil (1 tbsp.), and walnuts (1/2 cup), then mix everything together
  4. Slowly whisk in cold water (1/3 cup) and salt (1 tsp.)
  5. Serve immediately or chill in the fridge until ready to serve
