Radish and potato puree is a smooth and creamy mixture made from cooked radishes and potatoes. The radishes and potatoes are first washed, cooked, and/or boiled until they are tender. 

They are then mashed or blended until they form a smooth and velvety consistency. The puree can be seasoned with herbs, spices, or a touch of cream to add flavor and richness. Radish puree has a unique tangy and slightly peppery taste, which pairs well with roasted meats, fish, or as a side dish.

It is also a great source of vitamins and antioxidants, making it a healthy addition to any meal.

RECIPE

Creamy Radish, Garlic, & Potato Puree with Coconut Milk

Ingredients

For the Puree:
  • 20 chopped radishes
  • 3 tablespoons of extra virgin olive oil
  • 2 chopped onions
  • 2 chopped potatoes
  • 1 head of minced garlic cloves
  • 1 can of coconut milk (unsweetened)
  • 1.5 teaspoons of salt
  • 1 teaspoon of ground black pepper
  • Sprig of rosemary

Directions

For the Puree:
  1. In a Dutch oven or cooking pot, add olive oil over medium heat
  2. After heating for 3-5 minutes, add the onions, potatoes, and radishes
  3. Cook for 10 minutes and mix frequently
  4. Add garlic, ground black pepper, salt, and a bay leaf
  5. Mix and add unsweetened coconut milk and rosemary
  6. Mix together and cook for 20 minutes until the potatoes have softened
  7. Turn off the heat and remove the rosemary and bay leaf
  8. In batches, puree in a blender until smooth
  9. Serve immediately
