Croatian Mushroom and Bacon Soup (Juha od gljiva i slanine)

Ingredients

For the Soup:
  • 1 pound of finely chopped raw bacon (1 pack of 4-5 slices)
  • 1 finely chopped medium or large onion
  • 2 chopped medium potatoes
  • 20 chopped white mushrooms with stems
  • 1 teaspoon of salt
  • 1 teaspoon of ground black pepper
  • 1/2 teaspoon of dried marjoram
  • 1/2 teaspoon of paprika
  • 1 tablespoon of gluten-free flour (or all-purpose flour)
  • 2 sprigs of fresh thyme
  • 1 quart of beef stock
  • 1/4 cup of finely chopped cilantro

Directions

For the Soup:
  1. Heat a large pot or Dutch oven over medium heat
  2. Add the finely chopped raw bacon (1 lb.) to the pot and turn down the heat to low
  3. Let the bacon fat render for 15 minutes over low heat only, occasionally mixing the bacon with a large spoon so that it does not stick to the bottom of the pot
  4. Then add the finely chopped onion and mix with a large spoon for 2 minutes
  5. Then add the potatoes and mix for 5 minutes
  6. Then add the mushrooms (20), salt (1 tsp.), ground black pepper (1 tsp.), dried marjoram (1/2 tsp.), and paprika (1/2 tsp.) and mix together for 5 minutes
  7. Then add gluten-free flour and mix immediately until it is fully incorporated
  8. Then immediately add the fresh thyme (2 sprigs) and beef stock (1 quart)
  9. Turn up the heat to medium and cover the pot with its lid
  10. After 5 minutes, remove the lid and use a spoon to remove the foam of heavy fat that has formed at the top
  11. Let the soup boil for 15 minutes
  12. Then turn off the heat and add fresh cilantro (1/4 cup)
  13. Serve with dairy-free sour cream or dairy sour cream depending on your preference
