RECIPE

Duck and Italian Sausage Soup with Rice

Ingredients

For the Soup:
  • 1 tablespoon of extra virgin olive oil
  • 3 links of Italian sausages
  • 1 whole duck (4-5 lbs.)
  • 1 finely chopped onion
  • 3 minced garlic cloves
  • 1 finely chopped celery
  • 1 finely chopped carrot
  • 1 finely chopped bell pepper
  • 1 dried bay leaf
  • 1 teaspoon of smoked paprika
  • 1 tablespoon and 1 teaspoon of salt
  • 1/2 teaspoon of dried thyme
  • 1/2 tablespoon and 1/2 teaspoon of ground black pepper
  • 1 teaspoon of garlic powder
  • 8 cups of water
  • 1/2 cup of cooked rice
  • Fresh bunch of parsley or cilantro

Directions

For the Soup:
  1. Season the pieces of duck with salt (1 tbsp.) and black pepper (1/2 tbsp.)
  2. In a large pot or Dutch oven, add olive oil (1 tbsp.) over medium to high heat
  3. Sear the Italian sausage links (3) until golden brown on all sides. Remove and set aside.
  4. In the same pot, sear the pieces of seasoned duck until golden brown on all sides. Remove and set aside.
  5. Remove excess fat from the pot, only keeping a tablespoon in the pot.
  6. Add chopped onions (1), minced garlic (3 cloves), carrot (1), celery (1), and bell pepper (1).
  7. Sauté the vegetables until they are softened.
  8. Add a dried bay leaf and spices. Sauté for 2 more minutes and then add the water (8 cups) and meats back into the pot.
  9. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 30 minutes or until the duck is tender.
  10. Adjust seasoning with salt and black pepper.
  11. Serve the soup hot, garnished with cooked rice and fresh parsley or cilantro.
