These Greek fried pastries, also called Diples (pronounced di-ples) are traditionally served for Christmas and celebrations, taking only under 25 minutes to make. They have a slight crunch with a delicious flavor of honey, walnuts, and cinnamon and are small enough to enjoy for a low-calorie diet!

Greek Fried Pastry with Honey Syrup (Diples)

Ingredients

For the Pastry Dough:
  • 1 tablespoon of brown monkfruit sweetener or other natural sweetener
  • 1 and 1/2 cups of gluten free flour (add extra if dough is too sticky)
  • 1/4 teaspoon of salt
  • 1 teaspoon of baking powder
  • Zest of 1 orange
  • 1 teaspoon of vanilla extract
  • 3 tablespoons of tapioca starch
  • 1/2 cup of water (add extra if dough is too dry)
  • 1/4 cup of orange juice
  • 2 tablespoons of olive oil
  • 1 tablespoon of apple cider vinegar
  • Avocado, olive, or grapeseed oil for frying
  • 1 cup of finely ground walnuts
  • Ground cinnamon
For the Honey Syrup:
  • 1 cup of erythritol
  • 1/2 cup of water
  • 1 cinnamon stick
  • Peels from 1/2 large orange
  • 1/2 cup of Greek honey

Directions

For the Fried Pastry:
  1. In a mixing bowl add brown monkfruit sweetener, gluten-free flour, salt, baking powder, orange zest
  2. Mix until equally incorporated
  3. Make a well in the center and add vanilla extract
  4. In a separate bowl, mix water and tapioca starch
  5. Add tapioca starch and water mix to the mixing bowl with flour
  6. Add orange juice, olive oil, and apple cider vinegar to the mixing bowl
  7. Mix the pastry dough together and knead into a round shape
  8. Cover the pastry dough with plastic foil and set aside
  9. Chop walnuts with a food processor and set aside in a small bowl
  10. Sprinkle gluten-free flour over a rolling surface
  11. Set the pastry dough on the surface and divide into four sections
  12. Roll out each section of dough into a large rectangle with a rolling pin
  13. Divide rolled section into 10-16 sections
  14. Then loosely and carefully roll each section into a spiral
  15. Place each spiral into a separate bowl and set aside for frying
  16. In a small cooking pot, add erythritol water, cinnamon stick, and orange peel over medium heat
  17. Use a spoon to mix the erythritol into the water until it dissolves
  18. Let the syrup boil for five minutes and remove from heat
  19. Remove the cinnamon stick and orange peel
  20. After 15 minutes add honey to the syrup and set aside
  21. In a large dutch oven or cooking pot, add olive oil and set over medium heat
  22. After 5 minutes, add the spirals of pastry dough to the frying oil
  23. Fry the pastry dough for only 30 seconds to 1 minute, turning once halfway
  24. Remove the fried pastry dough and transfer to a drying rack
  25. Repeat until all of the dough is fried
  26. Rewarm the honey syrup if it has cooled (do not boil)
  27. Add pastries to the honey syrup and coat in batches for a minute or two
  28. Transfer the fried pastries to a large bowl and sprinkle lightly with chopped walnuts and cinnamon
