This is a gluten-free and dairy-free version of one of my favorite street foods growing up as a child called Atherina Tiganiti, or Greek fried smelts. They’re easy to eat like fries and taste wonderful with their pop of seasoning, crunch from the breaded outer texture, and freshness from a drizzle of lemon.

The traditional variation for breading the fish calls for flour, but you can substitute with a variety of others depending on your diet. In this recipe I use naturally gluten-free corn meal, which is a great source of dietary fiber, vitamin B6, and folate – and it gives the fried smelts and extra crunch. 🙂

You can substitute this recipe with other fish as well. If they’re larger you’ll just need to adjust your cooking time and ingredient measurements. These are traditionally served with lemon.

RECIPE

Greek Fried Smelts (Atherina Tiganiti)

Ingredients

For Breading & Seasoning: 
  • 1 lb of smelts (fresh or thawed with head & intestines removed)
  • 1/4 cup of vegan mayo
  • 1 cup of corn meal
  • 2 teaspoons of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of garlic powder
  • 1 teaspoon of ground coriander
  • 1 teaspoon of paprika
For the Fying:
  • 1/2 cup of avocado, grapeseed, or olive oil

Directions

For the Breading & Seasoning:
  1. Add smelts to a large bowl after rinsing under cold water and drying
  2. Add half of the seasonings and mix thoroughly
  3. In another bowl, add in the corn meal and the rest of the seasonings and mix thoroughly
  4. Add vegan mayo to the bowl with smelts and mix evenly until all of the smelts are fully coated
  5. Place all of the smelts into your bowl with corn meal, one at a time to fully coat
For the Frying: 
  1. Add oil to frying pan over medium heat
  2. Add smelts one by one into the fyring pan until it’s full (shake off any extra breading into the bowl before placing it in the hot oil to keep it clean as possible)
  3. Cook on both sides until they turn golden brown, then place on a drying rack of paper towel
  4. Cook any additional batches
  5. Serve with lemons
