Greek-Style Marinated Artichoke Salad 

Ingredients

For the Salad:
  • 3 tablespoons of extra virgin olive oil
  • 1 tablespoon of lemon juice
  • 1 minced garlic clove
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of salt
  • 1/2 teaspoon of dried Greek thyme or oregano
  • 1/4 cup of onion (white or red)
  • 2 finely chopped medium vine tomatoes
  • 1/2 finely chopped cucumber (skin peeled for optimal flavor)
  • 1 finely chopped head of baby romaine lettuce
  • 12 finely chopped smoked Kalamata olives (non-smoked is fine too)
  • 6 finely chopped marinated artichoke hearts
  • 1 tablespoon of parsley
 
  • In a large bowl, add the extra virgin olive oil, lemon juice, garlic, ground black pepper, salt, thyme or oregano, onion, tomatoes, cucumber, baby romaine lettuce, Kalamata olives, marinated artichoke hearts, and parsley.
  • Mix together until the salad is fully coated in the vinaigrette.
  • Enjoy immediately or store in the fridge.

Directions
