If you have pork neck, spine, or rib bones in the fridge or freezer this is a great recipe to try not only for flavor, but for the amazing health qualities!

The cooking process for this Korean pork bone soup, which is also called Gamjatang (pronounced Gamja-tang) starts with boiling the pork bones in a large pot with onion, ginger, and lots of garlic for at least an hour and a half. If you desire a more concentrated flavor, then boil for up to eight hours from morning to evening while checking in on water levels throughout the day.  

From there, add vegetables, potatoes, and Korean spices to finish the soup.

Korean Pork Bone Soup (Gamtajatang)

Ingredients

For the Soup:
  • 5 pork neck bones (3 lbs)
  • 200 mL of rice vinegar
  • 8 cups of water
  • 1 halved onion (without skin)
  • 8 crushed garlic cloves
  • 1 tablespoon of sliced ginger
  • 4 chopped small potatoes
  • 1 chopped green pepper
  • 1/2 chopped green cabbage
  • 2 cups of bean sprouts
  • 1 chopped onion
  • 2 minced garlic cloves
  • 2 tablespoons of korean chilli pepper paste (gochujang)
  • 2 tablespoons of korean red chilli flakes (gochugaru)
  • 2 tablespoons of ground roasted sesame seeds
  • Kelp noodles (uncooked)
  • 1/2 cup of green onions
  • Bunch of fresh cilantro

Directions

For the Soup:
  1. Soak pork neck bones in water for 30 minutes and clean well
  2. In a dutch oven or large cooking pot add water, pork neck bones, and rice vinegar
  3. Remove foam that forms at the top
  4. Then add a halved onion, crushed garlic cloves, and sliced ginger
  5. Boil over medium heat for 1 and half hours or a maximum of eight hours
  6. Add in water if the level becomes too low
  7. Then add in potatoes, cabbage, green pepper, and bean sprouts
  8. Boil for 20 minutes
  9. While the soup cooks, in a small bowl mix chopped onion, minced garlic, gochujang, gochugaru, and 1/4 cup of pork soup broth
  10. Mix the red chilli paste well and add to the pot of soup
  11. After 20 minutes have past, add the pork neck bones back into the soup
  12. Add ground roasted sesame seeds
  13. Boil for another 10 minutes
  14. Add in kelp noodles, green onions, and cilantro (You can also opt to boil the noodles in a separate pot and add them at the end)
  15. Turn off the heat and let the soup sit for a few minutes before serving
