One of my favorite ways to cook fish and absorb all of its great health benefits for the heart, respiratory, and digestive systems is in soup. And with white carp being incredibly rich in minerals and vitamins as well as delicious in taste I decided to pair it with tomato sauce, red wine, and light spices as a Mediterranean-style soup.

This is a quick and easy recipe that does not require ingredients that would be difficult to find – I highly recommend to give this one a try!

Mediterranean Fish Soup with Red Wine

Ingredients

For the Soup:
  • 1 whole cleaned white carp cut into sections (about 4 lbs)
  • 2 diced carrots
  • 1 diced parsnip
  • 3 diced medium potatoes
  • 1 diced onion
  • 1 diced celery
  • 1/2 diced green pepper
  • 1 tablespoon of black peppercorns
  • 1 cup of red cooking wine
  • 15 oz of tomato sauce
  • 3 liters of water
  • 1 tablespoon of salt
  • 1/2 teaspoon of ground coriander
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of crushed red pepper
  • 1/4 teaspoon of tumeric
  • 5 minced garlic cloves
  • 1 fresh sprig of thyme
  • 1 fresh bunch of cilantro

Directions

For the Soup:
  1. Add water to a cooking pot or dutch oven
  2. Add clenaed fish pieces to the pot over medium heat
  3. Remove foam with a spoon or seive when it forms at the top
  4. Add black peppercorns and cook the fish for 40 minutes
  5. After 40 minutes, remove the fish and set aside, removing any bones
  6. Use a seive to remove all the black peppercorns and any bones from the broth
  7. Add potatoes, carrots, parnsip, red cooking wine, and tomato sauce to the soup and boil for 20 minutes
  8. Halfway through the cooking time, add in onions, celery, green pepper, salt, coriander, paprika, red crushed pepper, tumeric, minced garlic, and thyme
  9. After 20 minutes have passed, add fresh cilantro and fish pieces back into the soup
  10. Serve with green onions
