I went out to a restaurant recently that opened my eyes to the technique of stuffing a rack of lamb. Wow, was it delicious! And I was ready to try it.

Trust me, it looks much harder than it actually is! You’ll need to season a rack of lamb, sear it in a pan, create your stuffing, and finish the cooking process with a broil in the oven.

RECIPE

Mediterranean Stuffed Lamb Rack with Homemade Cilantro & Mint Sauce

Ingredients

For the Lamb Rack:
  • 1 rack of lamb
  • 4 tablespoons of olive oil
  • 1 head of minced garlic
  • 1 sprig of fresh rosemary
  • 1 tablespoon of salt
  • 1/2 tablespoon of ground black pepper
  • 10 feet of butcher’s twine
For the Spinach Stuffing:
  • 1/2 chopped large onion
  • 2 cups of raw spinach
For the Cilantro & Mint Stuffing:
  • 1/2 chopped large onion
  • 1 chopped medium red pepper
  • 1 cup of fresh cilantro
  • 1 cup of fresh mint
  • 2 garlic cloves
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of cumin
  • 1/2 cup of olive oil
  • 1/2 cup of walnuts

Directions

For the Roasted Lamb Rack:
  1. Preheat the oven to 325 degrees Farenheight
  2. In a small bowl, mix 2 tablespoons of  olive oil, minced garlic, rosemary, salt, and black pepper
  3. Apply the mixture over the fat side of the lamb rack and spread evenly
  4. Heat a large pan over medium heat with 2 tablespoons of olive oil
  5. Place the lamb rack into the pan with the fat-side down
  6. Sear the lamb rack on the side with the fat down completely for 5 minutes
  7. Flip the lamb rack and sear for another 5 minutes
  8. Remove the lamb rack and let it cool
  9. Cut the lamb rack in half and set aside
  10. In the same pan, add onions and saute for 5 minutes until they are browned
  11. Add spinach and cook for another 2 minutes
  12. Place the spinach and onion mix evenly over the sliced half of the lamb rack in one layer
  13. In a food processor, add onion, red pepper cilantro, mint, garlic, rice vinegar, salt, paprika, cumin, walnuts and olive oil
  14. Pulse until they are finely chopped into a stuffing mixture/paste
  15. Add the stuffing over the spinach and onion layer neatly
  16. Lift the sliced lamb side with stuffing up until it connects with its other half and tie tightly with butcher’s twine
  17. Place the stuffed lamb rack into a baking pan and set in the oven
  18. Broil for 10 minutes until it reaches a 140 degrees Farenheight internal temperature
  19. Remove from the oven and let it set for 15 minutes
  20. Serve with the extra stuffing
