One of my absolute favorite desserts, that don’t last more than a day because they’re just so good, are pastry cookies filled with jam. Specifically, filled with apricot, strawberry, or raspberry preserve – just like how I grew up! 

These are so simple to make, with very few ingredients including cream cheese, butter, salt, vanilla extract, flour, and jam. And they yield very chewy cookies that will literally melt into your mouth.

Very popular among European countries, these cookies were originally inspired from Czechia, otherwise known as the Czech Republic. From there they spread throughout Europe and eventually the world. They can be filled with a wide variety of flavors, whether from fruits, nuts, poppy seeds, or cheese. The way I grew up was with either apricot, strawberry, or raspberry preserve – but there are so many more you can try using this recipe. 

While I do include powdered sugar as a topping or garnish to the finished cookies, you do not need to include them if you are avoiding sugar in your diet. Trust me, they taste amazing already from the sweetness of the fruit preserve filling.

Pastry Cookies Filled with Jam (Kolache or Polish Kolaczki)

Ingredients

For the Cookies:
  • 1/2 cup of unsalted butter
  • 8 oz of cream cheese
  • 1 cup of all-purpose flour
  • 1/2 teaspoon of vanilla extract
  • 1/2 teaspoon of salt
  • 1 and 1/2 cup of apricot & raspberry preserve (mixed)
  • 1/4 cup of water (to stick the dough folds together)

Directions

For the Cookies:
  1. In a large mixing bowl, add butter, cream cheese, vanilla extract, and salt
  2. Mix together completely either with a hand mixer or by hand with a large spoon
  3. Add flour and mix together either with a hand mixer or by hand with a large spoon
  4. Using your hands, press the flour and cream cheese-butter mix together until equally incorporated
  5. Knead the dough in the bowl into a ball shape
  6. Section the dough into four equal portions and cover with plastic wrap
  7. Place the bowl with the covered dough portions in the fridge for an hour to cool and harden (then they will be easy to work with, if they do not cool and harden then they will melt quickly and become very sticky)
  8. After an hour has passed, preheat the oven to 350 degrees Farenheight
  9. Sprinkle flour on a work surface and unwrap only one dough portion from the fridge (only work with one dough portion at a time, because the other portions will thaw and become sticky if placed outside)
  10. Roll out the dough portion completely, but not too thin
  11. Divide the dough portion into 3 inch by 3 inch squares
  12. Add two teaspoons of apricot or raspberry preserve in the center of each square
  13. Fold two opposite ends of each square, one folding over the jam at the center, and the other folding over to the other side
  14. Add water to a small bowl
  15. Dip a finger in the water and smooth it over the fold until it sticks to the form
  16. Repeat for all of the squares
  17. Repeat this process for any dough leftover from the first portion
  18. Add all filled dough cookies from the first portion on a baking tray with parchment paper
  19. Set the tray in the oven to bake for 15 minutes
  20. While the first tray with the first batch or portion of cookie dough bakes, repeat the process for the rest of the portions
  21. After 15 minutes of baking, remove the tray from the oven and let it sit for 5 minutes
  22. After 5 minutes, remove the cookies and place over a cooling rack to settle at room temperature
  23. After all batches have cooled, sprinkle powdered sugar with a seive if desired and serve
