This delicious recipe, that’s perfect for the autumn and winter season, is for a cabbage, potato, and kielbasa sausage soup traditionally called Kapusniak in Polish. It’s cooked with pork spare ribs in rendered bacon fat and spiced with majoram, thyme, and paprika to bring an incredible flavor to the soup.

Potatoes, red cabbage, carrots, and a parsnip are added to the recipe making a beautiful combination of colors and flavors for this soup.

The aromas that float out of the cooking pot are absolutley amazing, and for those that ate this dish growing up, it will definitely remind you of Christmas time. 🙂

RECIPE

Polish Kielbasa, Potato, and Cabbage Soup (Kapusniak)

Ingredients

For the Soup:
  • 1/2 diced red cabbage
  • 3 diced large potatoes or 9 small potatoes
  • 1 diced parsnip
  • 3 diced carrots
  • 1 diced onion
  • 1 pack of uncured smoked bacon
  • 1 smoked uncured kielbasa sausage
  • 1/2 pound of pork spare ribs
  • 1 teaspoon of salt
  • 1 teaspoon of majoram
  • 1 teaspoon of thyme
  • 1 tablespoon of paprika
  • 1 teaspoon of black pepper
  • 2 bay leaves
  • 4 small minced cloves of garlic
  • 3 liters of water
  • 3 cups of sauerkraut
  • 2 tablespoons of fresh dill

Directions

For the Soup:
  1. Add sliced bacon to a pot over low heat to render the fat
  2. Toss bacon with a spoon to ensure it doesn’t stick to the bottom of the pot
  3. After 5 minutes, add pork spare ribs and cook over medium heat
  4. After 5 minutes, add kielbasa sausage and cook until all the meat has browned
  5. Add the diced potatoes, carrots, and parsnip to cook for 10 minutes
  6. Add the diced onion to cook for another 5 minutes
  7. Add spices, bay leaves, cabbage, and garlic
  8. Toss the contents and let them cook for another 5 minutes over medium heat
  9. Add water and then collect any foam that rises after a few minutes of boiling
  10. Cook the soup for 30 minutes over medium heat
  11. Add sauerkraut and dill
  12. After an additional 5 minutes of cooking, turn off the heat and serve
