RECIPE

Pork Spare Ribs Soup with Rice

Ingredients

For the Soup:
  • 3.5 liters of water
  • 1.5 pounds of pork spare ribs
  • 1 peeled carrot
  • 1 onion (halved)
  • 2 dried bay leaves
  • 1 tablespoon of black peppercorns
  • 1 finely chopped red bell pepper
  • 3 finely chopped medium-sized potatoes
  • 1 tablespoon of finely chopped fresh ginger
  • 3 minced garlic cloves (medium-sized)
  • 1 tablespoon of salt
  • 1/3 cup of uncooked white rice
  • 2 tablespoons of fresh dill

Directions

For the Soup:
  1. In a large pot, add water (3.5 L) and pork spare ribs (1.5 lbs.)
  2. Turn to medium heat and bring the water to a boil
  3. Before the water comes to a boil, foam will appear at the top
  4. When the foam slightly darkens and looks as soft as a marshmallow, remove it in its entirety with a spoon until the leftover broth is completely clear
  5. Add a peeled carrot, onion (halved), bay leaves (2), and black peppercorns (1 tbsp.)
  6. Boil over medium heat for 45 minutes
  7. Remove everything from the soup with a sieve until the broth is completely clear, set the ribs aside
  8. Add red bell pepper (1 chopped), potatoes (3 chopped), fresh ginger (1 tbsp.), garlic (3), salt (1 tbsp.), rice (1/3 cup), and then add the ribs back into the soup
  9. Boil for another 20 minutes partially covered
  10. Remove the cover after 20 minutes, and add dill
  11. Turn off the heat and serve
