Stuffed pork rolls, or “Rulouri de carne” in Romanian are a classic and hearty dish that is popular in Romanian cuisine. This dish consists of a juicy and flavorful mix of  mozzarella cheese, eggs, red pepper, carrot, parsley, and a blend of spices, all rolled up in thinly tenderized pork loin cutlets. It’s a dish that’s perfect for a family dinner, lunch, or for special occasions like weddings or holidays.

The origins of Romanian stuffed pork rolls date back to the Ottoman Empire, when the Turks brought the technique of stuffing meat with flavorful ingredients to the Balkan region. Over time, the dish evolved and became a popular dish in Romanian cuisine. Today, it is a beloved dish throughout the country and is often served as the main course during festive occasions. 

These pork rolls are delicious and a nutritional dish! Pork is an excellent source of protein and is also rich in essential vitamins and minerals such as vitamin B12, zinc, and iron. RECIPE

Romanian Stuffed Pork Rolls 

Ingredients

For the Pork Rolls:
  • 2 pounds of pork loin
  • 2 slightly boiled carrots
  • 1 red bell pepper
  • 5 teaspoons of salt
  • 5 teaspoons of paprika
  • 3 teaspoons of ground black pepper
  • 1/2 pound block of whole milk mozzarella
  • 4 whisked eggs
  • 10 parsley sprigs (stems removed)
  • 40-50 toothpicks

Directions

For the Pork Rolls:
  1. Over a cutting board, slice a pork loin (2 pounds) in half and then slice each half portion length-wise instead of width-wise, which you normally would for pork chops (this way you will have more area to work with and larger rolls)
  2. Cover each pork loin with plastic wrap, and use a meat tenderizer hammer to pound the meat in an up-and-down pattern across the entire area (the plastic wrap ensures the hammer doesn’t remove chunks of the meat)
  3. Pound each pork loin under the plastic wrap until the size has doubled into a very thin layer, then set aside
  4.  In a small pot, add water to cover carrots and bring to a boil
  5. Quarter carrots over a cutting board and remove the skin if desired
  6. At medium-heat, add the quartered carrots (2) to boil for 10 minutes
  7. After 10 minutes, remove the carrots and set aside
  8. In a small bowl, mix together all of the seasoning including salt (5 tsp.), paprika (5 tsp.), and ground black pepper (3 tsp.), then set aside
  9. Slice a block of whole milk mozzarella into 10 equally long strips, then set aside
  10. Whisk together eggs (5) in a small bowl
  11. Then for each pork loin, season both sides (1 tsp. of seasoning)
  12. Add whisked egg (4 tbsp.), red bell pepper (4-5 slices), carrot (1 long slice), mozzarella (2 slices), parsley (2 sprigs) over the pork loin near the edge
  13. Roll the edge of the pork loin over the stuffing and continue rolling until it reaches the end
  14. Insert 8-10 toothpicks along the center and to close the ends
  15. Roast the pork roll for 30 minutes at 375 degrees Fahrenheit
  16. Store in the fridge within three to four days
