Influenced by recipe variations of salmon coubliac or salmon wellington, these are quick-to make wraps made with dairy-free phyllo dough stuffed with salmon, marinated onions, and mashed potatoes with green beans. 

Lately, I’ve been thinking about new meal prep recipes that are easy to eat without making a mess, yet still tasting like a full lunch or dinner. And this was one of them!

These wraps have the perfect ratio of pastry to stuffing and are cooked to perfection. The outer crust of the pastry is crispy with the inside juicy and soft, making for a delightful bite.

Salmon Phyllo Wraps with Green Beans & Potatoes | Dairy Free Lunch or Dinner with Salmon

RECIPE

Salmon Phyllo Wraps with Green Beans & Potatoes

Ingredients

For the Salmon Wraps:
  • 500g of chopped green beans
  • 2 medium chopped potatoes in quarters
  • 1/2 large chopped onion in quarters
  • 1 tablespoon of olive oil
  • 3 minced garlic cloves
  • 1 and 1/2 teaspoons of salt
  • 1 teaspoon of ground black pepper
  • 12 thawed phyllo pastry sheets
  • 1/2 cup of olive oil
  • 1 pound of salmon fillet (skin & bones removed)
  • 1/2 large thinly sliced onion
  • 2 tablespoons of vinegar or fresh lemon juice

Directions

For the Salmon Wraps:
  1. In a small bowl, add thinly sliced onion, vinegar, or lemon juice, and 1/4 teaspoon of salt to marinate and set aside
  2. Add water to a dutch oven or large cooking pot and set to a boil
  3. Add green beans, onion, potatoes, and salt to boil for 15-20 minutes
  4. Drain and keep 1/4 cup of boiled water
  5. Add olive oil, minced garlic, black pepper, and the boiled water
  6. Mash the green beans, onion, and potatoes and set aside
  7. Preheat the oven to 375 degrees Farenheight
  8. Trim the salmon fillets to form a 3-inch x 5-inch rectangle of even thickness
  9. Sprinkle 1/4 teaspoon of salt over the top of the salmon fillets
  10. On a clean surface, unfold and place a single phyllo dough sheet (cover the rest of the sheets with very lightly damp towel to keep them moist while you work)
  11. Lightly brush olive oil neatly along the entire surface of the sheet
  12. Stack equally with 2 more sheets, continuing to brush each layer with olive oil
  13. Add salmon fillet to the right-side, center of the stack
  14. Add marinated onion over the salmon
  15. Add mashed green beans, onion, and potatoes over the salmon with marinated onion
  16. Fold the bottom-half section of phyllo dough over the stuffing
  17. Fold the inner-side half section and then the top-half section of phyllo dough over the stuffing
  18. Repeat the same process with 3 more sheets, this time stuffind with the already wrapped salmon with 3 layers of sheets
  19. Add to a baking pan and bake for 30 minutes until golden brown
  20. Serve immediately
