Placinte, a term derived from the Romanian word “placinta”, which translates to “pie”, is deeply rooted in Romanian culinary tradition. These savory or sweet pastries have been cherished for generations, with each family adding their own unique touch to the recipe. Originally, placinte were made with simple ingredients like flour, water, and salt, forming a versatile base that could be filled with various ingredients. Overtime, the recipe evolved to incorporate a multitude of sweet fillings, including the delightful combination of fresh fruit jams. 

One cannot resist the heavenly taste of these pies. The secret lies in the harmonious blend of flavors and textures that come together in every bite. 

To store the pastries, first allow them to cool completely. Then place it in an airtight container to store in a fridge for up to 5 days. They can be reheated in the oven for 5-8 minutes at 350 degrees Fahrenheit. To fully appreciate the flavors and texture, it is recommended to consume them within 2 to 3 days.

RECIPE

Strawberry-Filled Spiral Pastry Pies (Romanian Placinte cu Capsuni))

Ingredients

For the Pastries:
  • 1 and 1/2 cups of warm water
  • 1 and 1/2 teaspoons of dry active yeast
  • 1 and 1/2 teaspoons of salt
  • 4 cups of all-purpose flour
  • 1 and 1/2 cups of olive oil
  • 1 pound of strawberry jam (or fruit of your choice)
  • 1 egg

Directions

For the Pastries:
  1. In a medium bowl, mix water (1 & 1/2 cups), salt (1 & 1/2 tsps.), and active dry yeast (1 & 1/2 tsps.)
  2. Then add flour (4 cups)
  3. Combine  and knead with your hands on a working surface for 10 minutes until it’s a smooth dough
  4. Clear any excess flour from the bowl and brush olive oil (1 tbsn.) inside the bowl and place the dough inside
  5. Cover the bowl with plastic wrap and a towel, and then place in a warm oven for 1 to 2 hours (Set the oven to 350 degrees Fahrenheit for 2 minutes and then turn it off for an ideal warm environment)
  6. Remove the dough when it has fully risen and divide it into 16 equal pieces
  7. Add olive oil to a bowl (1 and 1/2 cups) and set aside
  8. Set aside a large, empty flat bowl with raised sides (at least 10 inches in diameter)
  9. Spread flour on a working surface and begin to work with one piece of dough at a time
  10. Stretch the sides of the dough to the bottom and form into a circular shape
  11. Press the dough onto a floured surface with your hands and then roll it out until it’s 10 inches in diameter and circular
  12. Add 3 spoons of olive oil to the large, empty flat bowl with raised sides and make sure it covers the entire bottom side
  13. Add the rolled dough over the olive oil at the bottom of the bowl, this will the be the first layer
  14. Add another 3 spoons of olive oil over the first layer and make sure it covers the entire spread of dough (this will allow you to stretch the dough later)
  15. Continue to roll each dough piece and place over each other in the bowl with 3 spoons of olive oil in between
  16. This process will be finished when you have 16 layers of dough
  17. Preheat the oven to 350 degrees Fahrenheit
  18. Then clear the working surface of any excess flour and place the first layer of oiled dough over it
  19. Use your hands to stretch the dough into a rectangular shape (16″ x 12″), and remember that it’s okay if small holes form because they will be covered when you roll the filled dough
  20. Then add 3 spoons of jam to the edge of the dough and spread it in a line along the entire width, leaving 1/2 an inch of empty space at the top and bottom of the edge
  21. Then fold the first flap of dough over the jam and roll it out to the end
  22. Then twist this long shaped dough into a spiral shape
  23. Place onto a baking pan lined with parchment paper
  24. Repeat this process for all of the oiled dough pieces
  25. Whisk an egg and brush a thin layer over all of the spiral dough pieces
  26. Place the baking pans in the oven to bake for 30 minutes
  27. Remove and let the baked pastries sit on the baking pans for 5 minutes
  28. Then place them over a drying rack to cool completely for 20 minutes
  29. Serve immediately or place them in an airtight container
