Focaccia bread, a cherished Italian delicacy, has been delighting taste buds for generations. The soft, chewy texture and aromatic herbs make it the perfect companion for a variety of toppings, and today, I’m excited to share my take on this classic bread with a topping that brings a burst of Mediterranean flavors. Let’s dive into the world of traditional Italian focaccia and learn how to make it from scratch. 

Before we jump into the recipe, let’s take a moment to appreciate the history and appeal of focaccia bread. This flat, oven-baked bread hails from Italy, particularly the Liguria region. Its history dates back to ancient times, and it’s said to have been a popular food among Roman soldiers. The name “focaccia” itself derives from the Latin “panis focacius”, which means “hearth bread”. Traditionally, it was a straightforward bread made with minimal ingredients: olive oil, salt, water, and flour. However, what sets focaccia apart is its capacity to evolve and adapt, embracing a variety of toppings and flavors over the centuries. 

Overtime, focaccia has evolved and been embraced beyond its Ligurian roots. It has taken on various regional characteristics and toppings throughout Italy. Each region offers it unique twist, like the well-known “Focaccia Genovese”, a simple and classic version with a drizzle of olive oil and sea salt, and “Focaccia Barese”, which often includes tomatoes and olives. 

Today, creative bakers worldwide have embraced focaccia, experimenting with a plethora of ingredients, making it a canvas for culinary artistry. The result is a delightful amalgamation of traditional Italian flavors and modern innovations, elevating focaccia to new heights of gastronomic delight. 

Believe it or not, focaccia, when prepared thoughtfully, can be a healthy addition to your diet. Here’s why:

1. Olive oil: Olive oil is a heart-healthy fat that provides essential monosaturated fats and antioxidants. It can help reduce the risk of heart disease. 

2. Whole ingredients: Focaccia made with quality whole ingredients like flour, water, and herbs provides essential nutrients and fiber.

5. Homemade Goodness: Preparing focaccia at home allows you to control the quality of ingredients, making it a healthier choice compared to processed store-bought options. 

Proper storage is crucial to maintain its freshness. Here’s a guide to storing your homemade focaccia:

1. Room Temperature: Freshly baked focaccia can be stored at room temperature for up to two days. Place it in an airtight container or wrap it in plastic wrap. 

2. Refrigeration: If you need to store focaccia for a more extended period, refrigeration is an option. Wrap it in plastic wrap and store it in an airtight container in the refrigerator. Focaccia stored this way can last up to a week.

3. Freezing: To preserve focaccia for an even longer period, freezing is your best bet. Slice it into portions, wrap each slice in plastic wrap, and place them in a zip-lock bag. Frozen focaccia can be stored for up to three months.

To enjoy your stored focaccia, simply reheat it in a 350 degree Fahrenheit oven for a few minutes until it’s warm and fragrant.

Traditional Italian Focaccia Bread with Garlic, Marinated Artichoke, Red Pepper, and Rosemary

RECIPE

Traditional Focaccia Bread with Garlic, Marinated Artichoke, Red Pepper, and Rosemary

Ingredients

For the Bread:
  • 3/4 cup of warm water
  • 3/4 teaspoon of salt
  • 3/4 teaspoon of dry active yeast
  • 1 teaspoon of honey
  • 2 cups of flour
  • 1/2 cups of extra virgin olive oil
  • 1/3 finely chopped red bell pepper
  • 3 finely chopped pieces of marinated artichokes
  • 5 cloves of minced garlic
  • 1 sprig of finely chopped fresh rosemary

Directions

For the Bread:
  1. Set the oven to 350 degrees Fahrenheit, let it warm up for 2 minutes, and then turn it off to create the perfect proofing environment for your bread
  2. In a large mixing bowl, add warm water (3/4 cup), salt (3/4 tsp.), dry active yeast (3/4 tsp.), honey (1 tsp.), and flour (2 cups)
  3. Mix everything together with a spoon
  4. Knead the dough for 5 minutes (Since this is a less moist dough, it will be sticky but still require kneading)
  5. Brush extra virgin olive oil (2 tbsps.) in the interior of the mixing bowl and then place the dough on top
  6. Cover the mixing bowl with a towel or lid and place in the oven for 30 minutes
  7. After 30 minutes, remove the mixing bowl from the oven
  8. Pull up one side of the dough from the bottom and wrap it over the other side, repeat this for all four sides
  9. Then cover the mixing bowl with a towel or lid and place in the oven for 30 minutes more
  10. After 30 minutes, remove the mixing bowl from the oven
  11. In a long rectangular baking pan, brush extra virgin olive oil (2 tbsps.) in the interior
  12. Place the dough into the pan and stretch it until it covers the bottom of the pan completely
  13. Then place it in the oven to rise for another 30 minutes
  14. Now in a small bowl, add extra virgin olive oil (1/4 cup), garlic (5 minced cloves), rosemary (1 sprig), red bell pepper (1/3), and marinated artichoke (3 pieces from 1 artichoke)
  15. Mix the contents of the bowl together
  16. After 30 minutes, remove the pan from the oven
  17. Preheat the oven to 400 degrees Fahrenheit
  18. Use your fingers to press holes deep into the dough starting from the top to the bottom
  19. Then immediately pour your toppings over the dough, spread evenly (grating dairy/non-dairy cheese on top is optional)
  20. Place the pan into the oven and bake for 20 to 25 minutes until golden brown
  21. Remove the bread after it’s finished baking and let it set over a drying rack to maintain its crispiness
