Making the chewy, traditional banana bread that we all know and love can be tricky, but making a vegan and gluten free version can be even more of a challenge.
Banana bread itself is the most searched and loved bread recipe in America and has been particularly popular during hard times such as the Great Depression and the Covid-19 Pandemic.
Why? It is very quick to make from scratch because it does not require yeast and it is naturally sweetened from very ripe mashed bananas.
However, the traditional “cake-like” recipe is typically made with gluten based flour, sugar, butter, and sour cream or greek yogurt, which weighs this dessert on the heavy side.
I found that this variation of the traditional recipe yields a perfect banana bread without gluten, dairy, or sugar.
