If you’re looking for an easy recipe for very chewy vegan brownies, this is for you! This variation includes one of my favorite type of nuts, called pecans. 

To add a delicious flavor to the brownies, I roast the pecans with honey and cinnamon. Including pecans adds fiber to the dessert, honey add antioxidant content, and cinnamon has probiotic properties that can support gut health – making them great supplements for this treat! You can also add fresh fruit like blueberries, pomegranate seeds, etc. 🙂

Honey-Roasted Pecan Brownies | How to Make Chewy Vegan & Gluten Free Brownies with No Sugar

RECIPE

Vegan, Honey-Roasted Pecan Brownies

Ingredients

For the Brownies:
  • 1 and 1/2 cups of gluten-free flour
  • 1/4 cup of cocoa powder
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 cup of erythritol
  • 1/3 cup of grapeseed oil (avocado or olive oil works too)
  • 1 cup of water
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of caramel extract
  • 1 tablespoon of lemon juice
For the Roasted Pecan Topping:
  • 2 cups of raw halved pecans
  • 3 tablespoons of vegan honey
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of salt

Directions

For the Brownies:
  1. Add in the flour, cocoa powder, baking soda, salt, and sugar into a large bowl – whisk everything together to ensure everything is evenly mixed
  2. Add in water, oil, lemon juice, vanilla & caramel extracts to the bowl
  3. Whisk everything together until evenly incorporated
  4. Pour in the batter into a baking pan bottomed with parchment paper
  5. Bake for 30-45 minutes at 350 degrees farenheight
  6. Remove from oven and let it sit in the baking pan for 10 minutes
  7. Remove the brownie cake from the baking pan and let it cool completely for 20 minutes
For the Roasted Pecan Topping:
  1. Add all of the halved pecans into a bowl and combine very well with the honey, ground cinnamon, and salt
  2. Add each halved pecan to form a single layer on a baking pan with parchment paper
  3. Bake for 15 minutes at 350 degrees farenheight in the oven
For the Final Product:
  1. Drizzle thin lines of honey across the brownie cake evenly when it has cooled
  2. Chop the honey-roasted pecans with a processor
  3. Add the chopped baked pecans over the brownie cake (you can use a kitchen strainer if it helps you disperse them more evenly)
  4. Cut the brownie cake into even brownies and serve with fresh fruit
