Zucchini fritters, or Kolokithokeftedes in Greek, are a culinary delight that combines simplicity with bold flavors. These crispy morsels are not popular only in Greece, but have gained a worldwide following for their delicious taste and health benefits.

The roots of Kolokithokeftedes trace back to Greece, where they are a staple dish in Mediterranean cuisine. Made primarily from grated zucchini (or courgette), fresh herbs, feta cheese, and various spices, these fritters embody the essence of Greek cooking – fresh ingredients, robust flavors, and a focus on simplicity. 

Their popularity stems from their versatility and ability to please a wide range of palates. Whether enjoyed as a meze (appetizer) with tzatziki sauce, a side dish to accompany a main course, or even as a light meal on their own, zucchini fritters offer a delightful crunch paired with a soft flavorful interior. 

Beyond their delectable taste, zucchini fritters are celebrated for their health benefits. Zucchini itself ia  nutrient-rich vegetable low in calories but high in fiber, vitamins, and minerals. By grating and incorporating zucchini into these fritters, you retain much of its nutritional value, making them a wholesome addition to any diet. 

Moreover, zucchini fritters are typically pan-fried rather than deep-fried, reducing the amount of oil used and making them a healthier alternative to traditional fried snacks. They provide a satisfying crunch without the guilt, making them suitable for those looking to enjoy a tasty treat while maintaining a balanced diet. 

To store leftover zucchini fritters, allow them to cool completely before transferring to an airtight container. They can be refrigerated for up to 3 days. To reheat, place them on a baking sheet and warm them in a preheated oven at 350 degrees Fahrenheit, for about 10 minutes, or until heated through and crisp. 

Alternatively, you can freeze uncooked or cooked fritters for longer storage. If freezing uncooked fritters, arrange them in a single layer on a baking sheet lined with parchment paper and freeze until solid. Once frozen, transfer them to a freezer-safe container or bag, separating layers with parchment paper to prevent sticking. Cook frozen fritters directly from frozen, adding a few minutes to the cooking time.

RECIPE

Zucchini Fritters (Greek Kolokithokeftedes)

Ingredients

For the Fritters:
  • 3 zucchini, grated
  • 1/2 teaspoon of salt
  • 1 finely chopped stalk of green onion
  • 1/2 cup of farmers cheese
  • 2 eggs
  • 1 teaspoon of grated lemon zest
  • 1/4 teaspoon of ground black pepper
  • 1/4 teaspoon of smoked paprika
  • 3/4 cup of all-purpose flour or gluten-free flour
  • Olive oil, for frying

Directions

For the Fritters:
  1. In a small bowl, combine the grated zucchini and salt and transfer the mixture to a strainer and set above the bowl.
  2. Leave it to drain for 30 minutes.
  3. Combine the drained zucchini, with green onions, eggs, lemon zest, and farmers cheese in a large bowl and mix well.
  4. Fold in the flour and season with ground black pepper and smoked paprika.
  5. Heat two tablespoons of olive oil in a frying pan over medium-high heat.
  6. Add a tablespoon of batter into the pan and then add another tablespoon on top and spread into an even circle.
  7. Cook until golden brown on both sides.
  8. Then transfer to a drying rack topped with paper towel to soak any excess oil.
  9. Repeat with the remaining batter, then serve warm or at room temperature with your sauce of choice.
